#187 baked okra with tomato and ginger

jared hates tomatoes and okra, or so he thought. his mom used to make it all the time, and it was his worst nightmare. but i like both. i had him make this recipe, and he actually liked it. maybe anything can be good if you seasoned it right. i love the flavor of okra, it’s delicately sweet and vegetal. the sliminess is overstated, i think it’s mainly when they are raw, plus it’s nothing compared to raw cactus (see: me four weeks ago in san diego, wondering why slime is coming out of the back of my taco). the sauce is seasoned with ginger and chili flakes, and the dish is topped with fresh cilantro. very simple for an ottolenghi recipe, even an early one.
