so, i hate olives. i can’t remember who to give credit to, but someone on instagram suggested capers as a substitute, which is such a great idea. i couldn’t bear to make a beautiful loaf of bread and then ruin it with olives, but capers added a nice salty, savory touch to this light and airy loaf of bread. this is the same dough recipe as the french boule, but it is shaped more flat, and I baked on a sheet pan instead of in a dutch oven. this bread is perfect for veggie sandwiches, grilled cheese or avocado toast. if there is leftovers that go stale, it makes incredible croutons. this bread recipe has become one i’ve made repeatedly.
