#249 couscous with dried apricots and butternut squash

this is a tasty and fairly easy winter dish - roasted butternut squash tossed with cous cous, grilled onions, parlsey, mint, tarragon, dried apricot, lemon zest and cinnamon. jared thought that “there wasn’t much to it,” so take whatever you will from that. the main flavor actually comes from the saffron and broth that you cook the couscous in, so your dish will only be as good as your broth. i used better than boullion vegetable base, so maybe he’s just not a big fan of that. i liked this dish though!
