from a super upsetting cookbook about sandwiches (can be found in book preview)
this was so good, just like the last sandwich from this book. it’s cheese on cheese. i made fried shallots and cucumber muchim, a sour korean style pickle, ahead of time, and it was super quick to assemble for dinner. the melty cheddar was delicious with the avocado ricotta cream, sour cucumber and crunchy onions. a perfect toastie. i’m sure the leftover cucumbers will find some uses. i can’t wait to try more from this cookbook.
