cottage cheese is in! i haven’t jumped on the trend too much, but i really should to get more protein with all the weight lifting i’ve been doing. cottage cheese salad sounds like something my grandma would’ve eaten, and really not all that appetizing at first glance. but this is not your grandmother’s cottage cheese salad! it has chopped cucumber and tomato (from the farmer’s market), minced shallot, nutritional yeast, aleppo pepper, crispy fried shallots, and shallot oil. in her version she used furikake, but that was a little out there for me, so i continued on the oniony vibe with nigella seed. it was so good. . tons of texture, savory flavors, and ultra fresh tasting. and it had 25 g of protein. i’ll definitely be having this for lunch again.
