#56 cucumber salad with smashed garlic and ginger

I did squeeze one Plenty recipe in this weekend for #greatmindscookottolenghi, hosted by @r_schoofje @culyzaar @oksanaritchie @teffe_kocht and @tanya.mushanova. This is a super simple cucumber salad with garlic and ginger, like the name implies. The raw aromatics were a little too spicy for me, and I would cut back on those if I made again. The onions are pickled before they're mixed in, which helps mellow them out.
