#57 warm glass noodles with edamame

Ooooee this was another good one! The flavors weren't bold and in your face, but they were very bright and balanced. This made for a very light yet satisfying noodle dish. There's not a ton of cooking involved, you only saute garlic, and dump in hydrated rice noodles, thawed edamame, herbs and chile. A notable recipe to me, because it's my first time cooking with galangal. If you eat fish, I have a very strong hunch that fish sauce would be great here.
