traditional israeli salad

i don’t know about the name of this salad, but it is a good salad, for sure. i’ve made a similar salad from molly yeh before, but this one was miles ahead, thanks to my improved chopping skills and fresh midwest tomatoes. interestingly, it didn’t have onion, and i didn’t miss it at all. when making a dish this simple, it’s imperative that each ingredient is the best possible - good tomatoes, fresh cucumber and lemon juice, and good olive oil (we’re currently using graza). this would be perfect as part of a mezze spread, but i did it simple and ate it alone.
