que pasa shrimp salad

this salad was inspired by a shrimp salad on the menu at que pasa in rapid city. i didn’t actually get the salad - it’s very hard for me to not get enchiladas at a sit down mexican restaurant - but i thought i could make something similar at home. the original "gulf coast shrimp salad" has grilled shrimp, spring greens, avocado, tomato, mandarin oranges, queso fresco, pumpkin seeds, tortilla strips and a poblano pesto dressing. for our version, i had jared make some new orleans-style shrimp, and used chopped lettuce, avocado, queso fresco and tortilla chips. but i used mango instead of mandarins, cucumber instead of tomato, almond slices instead of pumpkin seeds, and a jalapeno, lime and cilantro dressing instead of poblano pesto. i also added quinoa, because it literally makes every salad better. it was as good as it looks, jared’s favorite part was the shrimp he made, and he wasn’t wrong.
