most of the food i enjoyed in norway was at the free breakfast buffet, but i did devour a a couple hearty salad from the oslo chain lett. we do have similar salad chains here, but the way they presented their salads was just so dang appealing. i got this ceasar at the airport and knew i had to recreate it. it is actually only a caesar in the loosest sense of the salad. i believe the dressing was vegan, so i used a vegan one instead of my typical go tos. then there is lettuce, shredded cabbage, pickled onion, radish, quinoa and a vegan nut parmesan. the original salad came with chicken, which i subbed for avocado. and since i was making quinoa anyway, and inspired by chef resha, i also doused the whole thing in crispy quinoa. i think it is one of the best salads i’ve ever made.
