pickled veg salad

this recipe was inspired by the adisalad from northern waters smokehaus, basically a salad filled with pickled veggies. i actually remember that when i had this salad, i liked the concept, but i thought it could be better. i made pickled cabbage and carrots, and added cilantro, mint, chopped cucumbers, and crushed peanuts. it’s kind of like a vietnamese inspired salad, but the pickled cabbage takes it in a bit of a different direction. i can’t remember what dressing went on it, so i decided to do a light ginger dressing. the base was chopped leafy lettuce. all together, j said this salad was “a banger,” and i would agree. here are some helpful links if you want to make a similar salad:

pickled carrots: this has been my go to recipe for a long time. just halve the brine to account for no daikon used
pickled cabbage: use any recipe. i used the cooled brine from power vegetables
ginger dressing: this was a good starting point. i added some sweet ginger dipping sauce from trader joe’s.
