#281 watermelon and feta salad with marinated olives and preserved lemon

there was one last recipe with the pickled watermelon rind - this salad. i usually try to stick to recipes as written, but in this case, i had to make a mod, because olives are not welcome anywhere near this household. instead, i decided to marinate the equvilant amount of watermelon. then i mixed the marinated watermelon with the rest of the salad ingredients including fresh watermelon and pickled watermelon. so this actually ended up being watermelon, three ways. it is a funky and unusual salad, the garlic, preserved lemon and chili brought some new dimensions to the almost overdone watermelon and feta salad. i think i would like to try a variation with just the preserved lemon, watermelon, and maybe some cucumber, mint and chili.
