#280 sharp and spicy watermelon soup

remember the pickled watermelon rind? it’s back again for another exotic soup recipe. the recipe for the rind from vegan soul kitchen is almost identical to the one from nopi, so it fit in well here. this was something quite different than your typical cold watermelon soup - it has indian spices and is served warm. it also turns a bright orange color thanks to the addition of tumeric. i tried to lay it out fancily just like the photo in the book, and i think i did pretty well considering i am not a fine dining chef. we slurped up this soup with homemade sourdough on the side. a tasty summer meal when you want something a little different.
