#263 chilled avocado soup with crunchy garlic oil

j gets credit for making me this one! i was looking for more things to dunk a surplus of sourdough bread into, and this avocado soup fit the bill. it’s the perfect time of year to make, no local produce yet, but still hot enough that it makes sense to eat a cold soup. this is a very tasty and rich gazpacho. the cucumber and dill add extra freshness. it’s almost more like an avocado dip than a soup, but either way it is delicious.
