from power vegetables (and smitten kitchen)
this tasty toast has been featured practically everywhere. it’s a tasty use of creamy kabocha squash, made more savory with lots of onions, maple syrup, apple cider vinegar and scallions. the version in the cookbook doesn’t have any cheese, but the ones around the web do. maybe cheese would take it to the next level, i liked this dish but not as much as the romesco toast from the same book.
