i was inspired after making the baked by melissa crispy potato salad to make something like that, but even better. i figured lox and egg would go perfectly with crispy potatoes, and a bed of frisée would be the perfect leaf to use as a base. i used the best lox i could find, from coastal seafoods. for the dressing, i used the same miso dressing, skipped the nutritional yeast, and added mustard, honey, and shallot to take it in more of a french direction. the dressing was delicious, as expected, and the salad as a whole was 10/10, if i do say so myself. i feel like it’s the kind of thing that would cost at least $25 in a hipster restaurant, and they wouldn’t be so generous with the lox.
