spring vegetable and quinoa hotdish

This is a tasty, hearty dish. The recipe makes a massive amount that filled my casserole dish to the brim. It’s kind of like a pasta bake, quinoa mixed with a béchamel sauce, leeks, scallions, spinach, garlic, chives, cheddar and parmesan. The crispy panko parmesan top was the best part.
