The main hurdle with this is prepping carrots, cucumbers, peas, broccolini and mushroom. After that the veggies are blanched in a flavorful broth made of red miso, mirin and dashi powder. The broth is reduced to make a savory sauce that is poured over sushi rice and veggies and finally topped with cilantro and a sauce of mixed black sesame, crushed peanut and rice vinegar.
