#162 bulgur with mushrooms and feta

I’ve been looking for recipes to use up the impractical amount of beans and grains that are in my cupboard, and this one was a great way to finish off a bag of bulgur. It’s not the simplest of simple recipes, I spent a good amount of time chopping onions and dill, slicing mushrooms, picking the leaves off of thyme, and then separately cooking the onions and the mushrooms before tossing everything together. But the result was good! I overdid it on the urfa chili flakes, the end product was too spicy for me. Who knew they actually had a kick to them?
