#200 sweet potato with goma dare and crispy tofu

from otk: extra good things

my 200th ottolenghi recipe! i was trying to hit this milestone in august, but i didn't, and then i went to california for three months so.... but i did do it! here’s another hit from extra good things (i’m getting a bit redundant). this one is a little more heavy than you would expect. roasted sweet potatoes are topped with gome-dare, a savory mayonnaise-based dressing that is flavored with ground sesame, soy sauce, rice vinegar and maple syrup. it is a little addicting. then, there is a quick chili oil that has paprika, aleppo chili and a dash of sesame oil. finally, tofu is shredded with a cheese grater (a first for me) and then tossed in olive oil, cornstarch and aleppo chili and baked until crispy. it was a bit of work to put this together on a weeknight, but the end result was worth it, the dish a variety of textures and was just really delicious and rich. i think you could simplify the dish by just making the roasted sweet potato and dipping in the gome-dare, and it would still hit the spot.
