#99 soba noodles with lime, cardamom and avocado

I finally got around to making this popular dish from the simple cookbook. I actually had my eye on it from a guardian column because it featured a unique ingredient I never heard of: green tea noodles! Luckily, I live down the street from a Japanese grocery store,, and they happened to carry these special noodles. If you can find them, I think they're worth it because the green tea flavor really does come through. I think the inspiration behind this dish was to make everything green: cilantro, basil, green chili, avocado, lime, green cardamom, green noodles, pistachio. I also stuck to the original recipe and added an egg on top to make it extra filling. I thought the combination of cardamom and noodles might be weird, but of course it ended up being refreshing, balanced and tasty.
