#98 chargrilled asparagus, zucchini and manouri

I am so proud of the grill marks on the manouri, I mean just look at that. It looks just like the cookbook. Chargrilled asparagus and zucchini are mixed with oven dried tomatoes and coated in a garlic basil oil and tossed with a bit of arugula for this dish. I found it a little more labor-intensive for me because it took a long time to char all of vegetables, but I do think the flavor was worth it. I used a special type of summer squash from my garden called centercut squash, it's like zucchini but way sweeter and more delicious. If I were to tweak this recipe, I do think it was a little bit oily, so I would cut back on the oil in the dressing and maybe add some vinegar. Otherwise it was simple, summery and satisfying.
