this might have been my favorite dish of summer 2022. fresh mozzarella, peak season minnesota tomatoes, perfectly ripe avocado, basil and the best grapefruit i could find in august were tossed in a delicious dressing of coriander seed, olive oil, maple syrup, paprika, aleppo chili, sesame oil, and sherry vinegar. i’m sure this would be sacrilege to italians, but in all honesty i loved this so much more than the traditional version. it’s freshness on a plate.
