#222 creamed corn stuffed peppers with pickled jalapeños

now that i am able to get romano peppers, i’m trying to get to all the recipes that have caught my eye. this one was so delicious, basically a creamy, cheesy corn and polenta mixture was stuffed into the peppers, roasted on a bed of onion, topped with quick pickled jalapeños and a garlic olive oil sauce. it was so good for dinner and also perfect to heat up at work the next day.
