#223 polenta with fresh corn and braised eggs

this herbed polenta was a tasty use of fresh farmer’s market corn, it was full flavorful ingredients - feta, garlic, parsley, chili flake, spinach and parmesan. even though i followed the directions, the eggs on top unfortunately cooked hard and the yolks weren’t runny. if i made again i would separate the yolks and add them in the last minute or two. i made it the night before we traveled to pensacola, and unfortunately, the leftovers didn’t get to be eaten.
