#221 za’atar parathas with grated tomato

this was a fun afternoon project to make with fresh tomatoes from the farmers market. they are made in a way similar to scallion pancakes, though with the parathas the dough is stretched super, super thin, like making roti. the instructions are very clear and easy to follow, despite a slightly complicated technique. lots of oil is involved to keep the layers separate and flakey. the grated tomato with garlic and good olive oil is a delicious accompaniment.
