carrot-juice curry

this beautiful thai-inspired curry was as good as it looks. i mean, coconut milk, carrot juice, red curry paste and aromatics really belong together, it turns out. i loved the touch of roasting the veggies before they’re added. there is an extra butter drizzle that is, in my opinion, wholly unnecessary. the presentation in the book is with rice noodles, but i served this with rice to soak up all the sauce. j really liked this dish as well.
