butternut squash with piquillo crema

from Power Vegetables (no online recipe but the headnotes say it was inspired by Rick Bayless)

This recipe was so easy, delicious and it turned out a fun neon orange color! Basically it is roasted squash drenched in a sauce of confit garlic, lots of crema, piquillo peppers and cotija cheese. Despite rich ingredients, it didn’t taste overly heavy because the squash balances it out. It was delicious as is, but since the recipe was inspired by Rick Bayless, I had to stuff it into tacos.
