crispy haloumi cheese with dates, walnuts, and apples

i've had my eye on this recipe for a while, but having a surplus of halloumi from aldi finally encouraged me to make it. it was really quite delicious with one caveat: there was way too much date and walnut paste in comparison to the halloumi. the paste had sherry vinegar added which was really delicious and totally balanced out the deeply salty and savory cheese. the apples and dill on top were a great touch too. if i were to make again i would just halve the amount of date paste.
