#245 olive oil crackers

my first recipe of the year! i’ve made crackers once before, but it’s not something i do regularly. it reminds me of a challenge on the great british bakeoff more than anything. the crackers were fairly easy to make other than the rolling out part - the dough develops gluten and has a tendency to want to bounce back. if i were to make these again i would absolutely use a pasta roller. the other thing is that they needed more like 8-9 minutes to get brown and fully crisp, rather than the 6 minutes suggested in the recipe. jared had me add parmesan to the top of his crackers, which worked well. this yields a sturdy, crisp cracker that is perfect for scooping up pub cheese.
