#246 black beans and rice with jammy peppers

this is a good healthy and vegan dish. the jammy peppers are made by sauteeing and simmering peppers and onions with spices and vinegar, they are a deep hit of umami. the rice and beans are very basic, i was able to make them in my new instant pot, but one unique addition is crunchy, citrusy coriander seed. this is a meal you could make on a weeknight, and very easily if the red peppers are made ahead of time.
