#197 dreamy pasta and beans with halloumi and arugula pesto

“Dreamy” is the perfect word to describe this delicious, hearty pasta dish. i loved this one. the pasta was cooked in broth to make a rich (but not heavy) sauce, which was complimented perfectly by cannellini beans, a very tasty arugula pesto, and very finely shredded halloumi. just so good. the arugula pesto is bitter yet completely balanced, i had to spoon extra on top of my pasta. i have never had halloumi as any other way but frying it in a pan, and was surprised that it worked so well as a topping. it doesn’t melt all the way, but it softens, and adds a super snappy punch. lastly the shape of, gemelli, is a particularly satisfying one.
