#196 turmeric fried eggs with tamarind dressing

this recipe was on my list to make even before it wound up in the new cookbook, and it did not disappoint… i think this may be one of my top favorite ottolenghi recipes. it was relatively quick to make, beautiful, appetizing and full of flavor. i think it is inspired by thai fried eggs. you basically make a quick pickle out of shallot, salt and lime juice, then a dressing out of tamarind, lime, fish sauce, and sugar, then cook down a whole bag of spinach with some garlic in a pan, then fry the eggs with a sprinkle of turmeric in the oil. there is also a neat trick of putting sliced peppers on the whites, so they become cooked into the egg. i am almost never successful at making sunny side up eggs (almost always turns into eggs over easy), but as you can see here the recipe lead me to success. the whole dish, especially with all the sauce and egg yolk was delicious over some white rice. another win from extra good things.
