these cute little veggie sushi balls took a lot of steps, but they were so fun to make! there are three toppings, one was dried shitake mushroom simmered in sake, soy sauce and sugar, one was radicchio pickled in sweetened rice vinegar, and the last was plain avocado. we found some really good tubed wasabi to go under the mushroom and avocado ones, and the result was so tasty! i would love to try more variations on this idea.
