#289 stuffed romano peppers with ricotta and mascarpone

i always get excited when i see romano peppers, and i found these ones as a new product at trader joe’s. this was perfect timing as i also had some homemade ricotta from a diy yogurt fail. the dish was delicious and fresh - ricotta, marscapone, pine nuts, stuffed into a roasted pepper, then topped with green chili (from the garden!), olive oil and a dash of balsamic. i served this with fresh baked ciabatta bread. delicious.
