from power vegetables

this is a fresh and tasty sauce that is very similar to chimichurri. i served it as suggested, with fresh homemade ciabatta bread and butter for a fancy appetizer.

MAKES 3 CUPS

3 scallions, finely chopped

1 bunch cilantro (about 2 cups leaves and stems), finely chopped

1 jalapeño chili, minced

1 garlic clove, minced

1 T red wine vinegar

2 T olive oil

1/2 t kosher salt

1⁄2 t freshly ground black pepper

2 medium tomatoes (about 1⁄2 lb), finely chopped

Toss together the scallions, cilantro, jalapeño, garlic, vinegar, and olive oil in a bowl. Season with salt and black pepper and fold in the tomatoes.

Let stand for at least 1 hour for the flavors to meld. Best after a sleepover in the fridge, once they've all really gotten to know each other.
