pimento cheese potato bites

j can eat absolutely ridiculous amounts of pimento cheese, so i knew none of theses would go to waste. it’s a cute idea of hallowing out some boiled potatoes, mixing the insides with pimento and baking til golden brown. nothing to dislike, but i will say molly yeh’s harissa pimento is my perfect version of the dip.
