miso maple kale salad

i need to iron out the recipe for this one a bit more, but this is my new go-to vegan salad. it’s inspired by a vegan restaurant in new orleans called seed (which seems to now be closed). i adapted this dressing recipe, but added a bit of orange juice and more maple syrup to make it super sweet and savory. the dressing is massaged into stemmed and chopped kale, then topped with yellow mango, edamame, almonds, sunflower seed and avocado. it’s so good and filling. i think the original version only had mango on it, but this dressing works really well with the extra toppings.
