toast a la rainbow tomatoes garden

if you’re not familiar, rainbow tomatoes garden is the ultimate canned fish online store in the us. it has some seriously fancy fish. my order came with a serving suggestion for sprats on toast, but i used olasagasti basque style anchovies instead. these anchovies are not salt packed and they are a lot more similar to sardines in texture and taste.

there were no quantities, everything is to taste. you puree peas, garlic, lemon juice, salt, pepper and oil from the canned fish. i also added lemon zest. then you spread this over some toast (i also toasted with the oil from the can), top with the fish filets, radish and capers. it was such a tasty and easy lunch! i used to have an aversion to canned fish but my love of anchovies has made me branch out.
