i have made khachapuri a few times before, and this one was a little different than previous iterations. they were much smaller (snack sized), and had feta and ricotta instead of melty cheeses, plus za’atar. the end result was tasty, but overall i wouldn’t recommend this recipe. there’s not enough space for the eggs and they end up spilling all over the place. there is an updated guardian version that looks a little roomier, i will have to try that one next.
