ramen noodle salad

this one is inspired by hennepin’s cafeteria! they always had this bizarre kale salad with cranberries, nuts and ramen noodles. it turns out this is a midwest thing, and i had to give it a try. i made this salad several times for work lunch at the v.a. when it’s fresh the noodles are crunchy, when it’s not, the noodles are more like cooked noodles. i’m actually a fan of the former. molly yeh has a version of this, that’s the one i need to try next.
