I love Pizza Hut’s crust, and the copycat recipe is pretty dang good. What makes it have that unique flavor is the addition of powdered milk. I wanted to incorporate that into my other favorite pan pizza recipe from King Arthur Flour. I learned the hard way if you let a dough with milk in it ferment for a long time, it makes the dough taste like vodka! Not exactly what I was going for. So I followed all the steps of the king arthur recipe with the long ferment, but before putting the dough into the pans I mixed in powdered milk. It worked! I got the ultra fluffy crust of the king arthur recipe with the sweetness of the powdered milk. This might be my new go-to technique.
