cold & crunchy green beans with garlicky pistachio vinaigrette

it’s nice to sometimes have a single vegetable instead of a salad that needs multiple kinds of produce. this is a delicious, fairly simple green bean recipe. it’s a bit like a caesar with lemon, garlic and parmesan, but with pistachios and no funky anchovies. i used a mortar and pestle to crush up the nuts and mix the dressing, which made it super easy. i found the dressing made more than you need for the amount of beans it calls for. otherwise, a very ideal and easy veg recipe.
