lately i’ve gotten into Power Vegetables, a cookbook that hasn’t gotten much use thus far. it has lots of fun vegetables recipes and feels very of the times of when it was published, 2016. it reminds of superiority burger cookbook, but much more practical for the home cook. this empanada recipe was a fun afternoon project. watching lots of rick bayless videos and many ottologeni recipes have made me an expert at roasting peppers on the stove, and then these are combined with onion, garlic, mexican oregano and crema, a classic mexican combination. i was so pleased with how they came out, the dough was easy to work with and as you can see they all actually held together.
