#228 corn cakes with beetroot and apple salad

i haven’t made many recipes from nopi, they usually have some hard to find ingredients and are even more involved than typical ottolenghi. i’ve had my eye on these because the presentation was so cute. these cakes are actually more like a pudding, they are soft and fall apart but have a rich corn and licorice flavor (thanks to fennel seed and tarragon). the beet and green apple slaw was a nice touch to add some veggies, but nothing particularly special.
