#60 roasted whole cauliflower with green tahini sauce

I have seen so many whole roasted cauliflower recipes, seems like a 2010s staple, and yet I have never made one. This one doesn't have any seasoning, just lots of butter and oil, which is still plenty flavorful. What you get for roasting a whole head as opposed to the florets is a crispy exterior and a soft steamed interior. The green tahini sauce is also a short ingredients list: just tahini, water, lemon, parsley and garlic. I ended up adding extra everything to make the flavor bolder.
