#62 raw beet and herb salad

I came home to this salad that J made me last night after a 13 hour day. So much better than something from the freezer. There were tons of flavorful herbs here and the crunch of The toasted nuts and raw beets was enough to fill me up but did not get in the way of my imminent need for sleep. The raw salad chapter of Plenty More is one of my favorite cookbook sections so far.
