we tried to welcome spring with a cold noodle salad, but it decided to snow several inches instead. Regardless of the seasonality, this was another really great dish. It was super satisfying, packed full of flavor, and eating lots of crunchy vegetables made us feel healthy. The combination of seaweed and crunchy veggies was vaguely reminiscent of a veggie sushi roll.
