strawberry quinoa salad

i wouldn’t bother posting the actual recipe for such a basic salad, but i had to post a photo because it was so good! what made it great was that everything was chopped into small pieces, so you can eat it with a spoon and also get a good balance of everything in each bite. also strawberry and cucumber are so good together! i think from now on, this is how i need to make salads. i just realized i forgot onion, which would have been super tasty. but basically i cooked 1/4 cup dry quinoa with some vegetable broth base, then chopped up lettuce, cucumber, avocado, and strawberry. i used sliced almonds that have been sitting in my freezer, and leftover feta that had basically taken up a lease in my cheese drawer. the dressing was 3 glugs of balsalmic vinegar, 1 T olive oil, 2 t honey, 2 t dijon and salt and pepper.
