pickled onions and tomatillo salsa from rick bayless
i have a list of recipes that i want to make, and it would take years to make everything, if ever. but sometimes i see something and it jumps the line, i want it right now. that was these egg tacos on instagram. the tortillas are spread with refried black beans (i make myself by blending and simmering canned black beans, water, better than boullion, garlic, onion and mexican oregano), then topped with an egg fried in a ring of cheese, corn, pickled onion, cotija and green salsa. i used my trusted rick bayless recipe, i don’t even have to look at it anymore. i also used his pickled onion recipe for the first time. it is very good, the lime juice adds an extra fresh flavor. they were so good, and so filling. once you have the ingredients together it’s very easy to remake the leftovers.
